1. Sala Thai, Windsor

Endearingly called MOO and VAN, Sala Thai’s owners do their very best to present the best authentic Thai dishes that they can. Their menu includes everything vegan, gluten free and other special requests are available. Located in a small strip mall in Windsor on Main Street and established in 2011, Sala Thai is a great place for people to eat, drink and gather, and their staff is very friendly. They have a great lunch menu selection with 15 specials, including Thai Coconut Curry, Spicy Bamboo, Vegetable Delight and Drunken Noodles – which includes soup, a spring roll and rice for under $9. Order take-out or schedule a reservation any day of the week for yourself or your whole office! Sala Thai is proud to have received several awards from the Windsor Beacon, Zomato and Urbanspoon for One of the Best Asian Restaurants in Windsor.

2. La Piadina Food Truck, around the Fort Collins community

La Piadina Food Truck serves piadina flatbread sandwiches that are made from homemade dough and made-from-scratch toppings and sauces such as pesto, cream of mushroom, spicy olive oil and a soft cheese sauce. La Piadina also uses all fresh produce from Fort Collins farmers, and owners grow arugula and basil in their very own garden. The service is very fast if you’re in a bind for time and for about nine bucks, you can try one of Italy’s finest authentic street foods and design your own flatbread creation. 3. Stuft, Greeley

Stuft Burger Bar is not only located in Greeley — there’s also one in Fort Collins and in Windsor. Similar to Five Guys Burgers & Fries, Stuft not only prides itself on using fresh, USDA ground beef, but they also allow customers to choose their meat: beef, grilled chicken or vegan veggie. Then, choose from unique toppings such as dried cranberries, fire roasted chili peppers, cheese curds, pickle chips and more. Stuft is rated on Yahoo Travel’s with the “Best Fries in Colorado” and it might be because they use the Kennebec potato which is hand-cut in the kitchen daily, rolled in garlic, and then sprinkled with Parmesan cheese. Don’t forget to try the warm, glazed doughnut bun while there.

4. HuHot Mongolian Grill, Fort Collins
